Perform HACCP monitoring duties for designated Critical Points (cream, milk, and vat pasteurization and metal detectors) as required per sub-job categories. Maintain proper records, cleaning in place (CIP), and sanitizing procedures. Monitor and/or record operations in NAV and Wonderware systems.Here’s a day in life: Cheese TowersSet up towers and sealers for production; operate towers and sealers throughout the production day and control blocks weightsCIP and sanitizing procedures; tower vacuum pump hookups for production and CIPCheese BoxerSet up and operate boxer for production; ensure the boxer runs properly throughout the production dayEnsure proper recipe, date and count is correct;Clean boxer, boxer room, and salt roomFill and monitor the salt bins; perform hourly boxer and leaker and salt checksMake milk silos changes when necessaryCheese Cold StorageOperation of the block cooler and palletizer, and operation and verification of the metal detectorObtain proper sample blocks; use of ADC scan gunCheese VatsConfigure the vats, lines, cheddar master, and salter for the production dayStart the milk flow and operate the cooking vats, cheddar master, salter, and clarifierCheese Process OperationsStart and run: the Milk HTST, the Separator, the Whey HTST, and the RO systemPerform Mid-Day Wash of the Milk HTST; document cleaning, CIP, and sanitizing proceduresMaintain hourly readings and records; hourly testing of Milk componentsKnowledge, Skills and AbilitiesHigh school diploma or GED is required. Previous food production or production/manufacturing experience desired.Basic knowledge of Microsoft Word. Knowledge of ERP systems i.e. NAV is preferred.Ability to establish and maintain effective relationships with co-workers and supervisors. Ability to communicate effectively.Must be a team player and be able to interact with staff at all levels of the company. Demonstrate a strong work ethic.Physical Requirements:Must be able to work in a food manufacturing plant environment.Must be able to be certified to operate a forklift.Must be able to stand full shift.Be physically able to regularly and frequently handle both 40-pound blocks of cheese and 40-pound bags of salt.Must be able to work a varied schedule with rotating days off (including days and swing shifts – or graveyard as needed), weekends and holidays.Industry-leading benefit and reward programs: We offer outstanding benefits to our employees.
